Sauté / Sautèing
Adding a small amount of liquid (like water, broth, or wine) to a hot pot or pan that has a buildup of cooked food on it. This releases what is stuck to the pan and is often the first step to making a pan sauce, or for starting soup/stew.

What is deglazing?

This is the the reaction that happens between amino acids and reducing sugars as food is cooked at high enough heat (at or over 300°F) to get browning and develop new flavor compounds.
What is the Maillard Reaction?
In food safety, this is the name for the temperature range that food should NOT be left at, because bacteria grows the best in this range.
