Because his nephew, Tybalt, just died and that make it much easier to be angered. When Juliet says she wouldn't like to marry Paris, he flips at her, due to his current state of being. Also, he has already put effort into this wedding, and he will now look like a fool. He basically says that if Juliet doesn't marry Paris, she will no longer be his daughter.
