This style of barbecue uses a red sauce, or "dip", made from vinegar, tomatoes, and usually red pepper flakes, along with other spices that vary from recipe to recipe. The sauce also serves as the seasoning base for "red slaw" (also called "barbecue slaw"). It is popular in (central) and western areas of North Carolina. The name doesn't really make sense since North Carolina does not actually border Kentucky.
