The name of the יום טוב is שבועות (weeks), we count up (not down), the actual day can be the 5th,6th or 7th of סיון, and we count "to the עומר", and no-where in the Torah does id say anything about counting to Matan Torah!
What is all the questions that point to the fact that our counting is focused on each individual day of growth from the low level we started on. We don't focus on the end goal, because it would out-shine each small step of growth. The process is the key to preparing ourselves and being ready for the end result.
