Freddy gripped his tennis racket firmly as he crouched in the middle of the court to wait for his opponent’s serve. Sweat trickled down his forehead and temples as he tried to peek from the corner of his eye to see if Sylvia was watching him.

The Evolution of Hershey’s Chocolate
The creator of Hershey’s chocolate—the “great American chocolate bar”—Milton S. Hershey, was not exactly an overnight success. It took many years and more than a few doomed efforts before he hit the jackpot. He first worked as an apprentice with a Lancaster, Pennsylvania, company in the late 1800s. After 4 years there, he left to start his own candy-making business in Philadelphia. This shop soon failed, however. His next two tries in New York and Chicago did not fare any better. Then, in 1883, he founded the Lancaster Caramel Company, in Lancaster. The caramels caught on like wildfire, and Hershey finally had a success on his hands.
Then, in 1893, Hershey went to the Chicago World’s Fair. There, he saw a German chocolate-making machine on display. He liked the idea of making chocolate, so he bought the machinery needed for his plant. In 1900, Hershey sold his caramel company for $1 million so that he could focus just on making chocolate. A few years later, he built a factory in the town of Derry Church, which was out in dairy country. This enabled Hershey to get all the fresh milk he needed for making milk chocolate.
At this time, high-quality Swiss chocolate was one of the only types available in America. It was not exactly cheap, and Hershey knew this. So he set out to make a milk chocolate that did not cost as much. Once he came up with the recipe, he built a giant factory in 1905 so he could make his product in very large quantities. Before long, Hershey’s milk chocolate was sold nearly everywhere in America, from corner stores to grocery stores.
