Are you allowed to talk while in the air?

You are allowed to talk while in the air. The pilot will ask you to be quiet for some amount of time on takeoff and landing, but you can talk.

No. Tell the pilot or ground crew, they can retrieve it for you.

Can you touch the yoke if the pilot confirms you can and says you have the controls?

Yes. It's your plane to control now. (rather just the yoke and rudder pedals) Just dont go too crazy with the controls and have the pilot take the controls if you feel unsafe.
