If you took a sample from multiple pieces in a heterogeneous mixture, you would likely have a very different composition.

No, the atoms have not been destroyed. They have only changed form. The log has been turned into ash, gas, and water vapor. The total mass of all those things from the log added together would equal the mass of the log before it was burned.
