What is a chemical change?

The sugar molecules ignite when exposed to heat. They decompose into a mass of left over black carbon molecules that no longer look like the sugar that you started with.  You cannot put it back to its original form and it looks like something new formed (smell, color, heat), so a chemical change has occurred.
