If an interviewer declines the calendar event one week before on their calendar but then accepts it 5 minutes before the interview, how will this show up in the data?
It would show as accepted; it's about the final action at the time the interview was done

If they are assigned to two different tags and both are in the interview, they will show up under the first one that appears alphabetically.
For RC coverage, if one RC sends the request availability then another RC confirms the interview, how is that tracked on the recruiting leaderboard? Who would "get credit" is this case?
The original RC would get credit in this case.
Whoever is listed as the coordinator on the interview gets the credit. If you have fully automated your scheduling process using the request availability function, then the 'credit' will be automatically assigned to the coordinator once the candidate confirms the interview. If you have 'Require Review' on, then you can change the coordinator before confirming the interview to reassign the credit
