Trained in nursing in Chicago, this woman moved to Tampa in 1901 and is remembered as a caregiver and a humanitarian. In 1908, when a White physician asked her to care for an ill-Black patient, she offered her modest, three-room house. Her dining room table served as the operating table and her bedroom as the recovery room. Her home served as a hospital for Blacks for 15 years, and she never refused anyone service, despite their inability to pay. In 1923, she borrowed money to buy a two-story building and converted it to a larger hospital, named after her. She worked there until health challenges succumbed her. She died at 63, impoverished because of refusal to press people for payments. She has a wing in Tampa General Hospital named after her. Her surname is synonymous with what we love to do to chicken.
