It's late July, and a small town is abuzz with the annual summer picnic. The next day, several attendees begin experiencing severe abdominal cramps, diarrhea, and fever. Public health officials are soon investigating a cluster of Salmonella infections.
The initial investigation points to the potato salad and coleslaw from the picnic. Further analysis confirms a high concentration of Salmonella in a leftover sample of the coleslaw.
The person who prepared the coleslaw, Mary, was feeling slightly unwell the day before the picnic. She had a mild case of "stomach flu" a few days prior, which was actually an undiagnosed Salmonella infection. Mary was an asymptomatic carrier at the time of food preparation.
During the coleslaw preparation, Mary didn't wash her hands thoroughly after using the restroom. She then handled the raw cabbage and carrots for the coleslaw. The bacteria were transferred directly from her hands to the vegetables.
