Peanuts were important to George Washington Carver as he shared that they were able to provide nutrients to the soil to help out local farmers with a more fruitful crop/harvest (of things like cotton every other year). 

Bison and birds were two animals that were important to Theodore Roosevelt, and he went to great lengths to create sanctuaries and National Parks to protect these animals, and their habitats.
