widely believed to have been invented in 1974 at the Puritan Backroom restaurant in Manchester, New Hampshire. Charlie Pappas, the son of one of the restaurant's founders, created the recipe. He used chicken pieces that were trimmed from larger cuts. He marinated the chicken in pineapple juice and then fried it. He served this food item with a sweet, yellowish sauce that he called "duck sauce". Today you might eat it with Ketchup or honey mustard.
