Assure the guests that they will be sat soon, alert a manager to the issue, look for alternative options to seat the guests faster.

After getting off of a wait, food is now taking longer to come out and the kitchen and expo manager are falling behind. While the realistic wait time for a table is 15 minutes, how long would you quote a guest?

25-30 minutes. Going on a false wait during busy times, such as just getting off of a long wait, allows everyone to catch up and prepare for the next round of guests.

A guest comes in and says she put her name on the online waitlist 30 mins ago. She comes to check in, but you do not see her name. She is insistent that she put it on and is now frustrated because the walk-in wait is 45 minutes. What do you do?

Ask the guest if she would still like to be added to the waitlist. If so, add the guest and prioritize seating. (Seat the next 3-4 who were previously on the wait, then make an attempt to seat the guest who was supposed to be on the online waitlist)
