Why is the sanitizing step so important? What happens when it is not done regularly?

This is for internal parts of machine. Without this step, contaminants could end up in product or build up in machine.

What chemicals are used?

Kay 5 sanitizing solution (do not use Quat-based sanitizers such as SolidSenseTM and KAYQUAT® II). Multi-Purpose cleaner can be used on the exterior of the machine. Either type of sanitizer can be used on the milkshake spinners.

How often should the milkshake spinners be cleaned and sanitized?

Every 4 hours and more often as needed

What would cause the machine to freeze up when in use?

Worn beater blades, clogged mix-feed inlet tube, not enough ice dream mix in the hopper, not cleaning the machine daily, and/or not letting the machine rest 20 seconds between draws.

Why do we prime the machine? What does this step do?

This forces out the remaining sanitizer and ensures finished product has the proper texture by regulating the air-to-mix ratio.

What nights should ice dream mix be thrown away to break the cycle of bacterial growth?

How often does Chick-fil-A recommend to change the blades and the parts in the tune up kit?

Once a month (Draw valve O-rings, may need to be replaced more often in high-volume restaurants)

What should you do in the event of a freeze-up?

  • Press AUTO on each side of control panel to cancel cycle and then turn off ice cream machine.
  • Press reset button firmly. Do not use anything other than a finger to press reset button. Using a metal object to press this button could result in a severe shock.
  • Turn power back on and press WASH on side of machine with freeze-up to start wash cycle.
  • Check to see if ice cream machine is ready to dispense product.
  • If so, press WASH again to end wash cycle. Then press AUTO on each side of control panel to resume normal operation.
  • If this does not resolve freeze-up, take further action according to manufacturer’s materials.

Milk fat in previously frozen Icedream mix freezes more quickly than fresh mix and will cause the machine to freeze up

Rear shell bearing/hex drive socket (with a screw driver and a clean towel to remove any lubricant and/or mix deposits) and condenser coils (with soft bristle brush).

What could cause the ice cream machine to take too long to freeze the ice dream or run nearly continuously throughout the day?

Room temperature ice dream mix being poured into the machine or dirty condenser coils (Coils should be cleaned by a team member monthly and by a Taylor service professional annually)
