Day 1 crush, press, additives. 1 week later rack, chaptalize (add sugar), inoculate (add yeast). 3 weeks later rack off dead yeast, more additives. 1 month later rack then velo filter. 2 weeks later 1X filter. 2-3 weeks later = blend. Back sweeten then pad fillers as needed, then bottle for still wines. Crush to bottle = 6 mos.
