Honey and maple syrup have a slightly lower glycemic index (GI) than table sugar, but all 3 are in moderate glycemic index category (a high GI = digested more quickly and used by the body. Only carbohydrates are assigned a GI range)  Nutritionally they are very similar to table sugar, the difference is slightly more trace minerals than table sugar.
