A quote is either writing down the exact words one someone has said, or it is writing down the exact words that are written in a text.

No. (But, you may include a final thought which you haven't raised yet to leave the reader something to think about)
In an essay should you use phrases like this: "In this essay I am going to write about the film, Mt. Zion." ?
No. It sounds too informal. You should never include these types of phrases.

No. You can use first person (I think) when bringing up your personal opinion, but most of the essay should avoid using personal pronouns - I, me, my, mine etc

Because it makes your reader think about your topic before they have read what you think, making them want to read the essay more.
