When a thermometer is placed in a hot liquid or substance the molecules in the thermometer liquid start to move faster and spread out this allows for the liquid in the thermometer to spread out and read a higher temp. When placed in a cold substance the molecules in the thermometer liquid start to slow down and condense making the thermometer read at a lower temp.

When water freezes it becomes less dense. This is because of the charges of the molecules. When they start to solidify they are farther apart. This in makes it less dense. This is why ice floats on water. If ice was more dense the entire planet could potentially be covered in ice.
