What is the very first step of service for banquet functions?

Preparation and Briefing: After swiping in, staff to check-in with CSM/SEM at the F&B office, to look for and copy BEO. Staff members are briefed on the evening's menu, any dietary restrictions or special requests, and the specific service standards expected for the event.

What is 1 featured wine in PW weddings, and one characteristic?

CDC Chardonnay, CDC Cab-Merlot.

The Chardonnay is fresh and crisp. On the nose you will find notes of apple, grilled pineapple and a little nuttiness thanks to the extended lees contact. The acidic backbone is there but definitely in a supporting.

The Cabernet-Merlot is a classically styled blend of Cabernet Sauvignon, Cabernet Franc and Merlot that has been aged for six months in French oak barrels. It will remind you of dark chocolate, raspberry and cassis.

Jack Rabbit White, Jack Rabbit Red "Special Edition".

White: A blend of Riesling and Vidal, with a burst of aromas of apricot, guava and zesty citrus (lemon, lime, grapefruit).

Red: This wine is a dry, medium-plus-bodied and vibrant Baco Noir, Cabernet Franc and Cabernet Sauvignon red wine blend with amazing acidity for food with dried fruit notes of plum and cherry.
