How do chemical leaveners work to make our baked goods rise?

Chemical leaveners like baking soda and baking powder create carbon dioxide gas through a chemical reaction, causing baked goods to rise and become fluffy. Baking soda, an alkaline base, needs an acid (like buttermilk or lemon juice) to react and produce gas. Baking powder is a complete leavening system that includes both baking soda and a powdered acid, so it reacts with moisture alone
