This is a common style of Illustrator artwork, and despite its name can accomplish depth in images using layered shapes and color variances.
What is flat art?
Adding and adjusting these allows you to add movement to text and images, among many other uses.
What are Keyframes?
Adding this element to a shape layer allows you to create effects like making a line draw itself along a map.
What are Trim Paths?
Dr. Elam's favorite movie (also where one of her tattoos comes from).
What is Blade Runner?
These layer types are used to apply changes to elements such as Hue/Saturation, Curves, and Selective Color.
What are adjustment layers?
This tool is also available in Photoshop, but works differently in Illustrator, creating new paths rather than removing content.
What is the eraser tool?
Applying this effect removes green screens (or any solid color screen) from video.
What is Ultra Key?
Adjusting this setting in the Trim Paths menu of a shape layer results in the effect of, for example, a shape drawing its outline, but traveling dynamically along the path.

This type of mask is used to make a layer's properties only apply to the layer directly below it, rather than all layers.
What is a clipping mask?
This tool allows you to select and manipulate individual anchor points.
What is Direct Selection?
Applying this effect results in a text or shape layer becoming a transparent overlay on a video clip.
What is Track Matte Key?
In order to export a composition with a transparent background, this setting needs to be selected in the output settings.
