This is evidence of Earth's rotation! The Sun appears to rise in the east and set in west because the Earth is spinning counter clockwise. As the Sun moves across the sky shadows change in length: becoming shortest near noon (when the Earth is most directly facing the Sun) and getting longer around sunrise and sunset (as the Earth rotates away).
