Absolutely they are important. Dividing students up can be done in many ways:students personalities, need to be up close, ability to focus, educational needs, etc. seating and flexible seating are a big part of classroom management.

During stations. Each station can have different ways of instruction, such as: small group reading, one on one matching games, games for learning, small group with the teacher, journal work, etc

Provide a safe and comforting environment. The calmer and safer students feel to communicate and feel heard, the more likely they are to listen and want to cooperate with the teacher.

Separate students into reading groups by their reading levels. Move students groups as needed (when progress is made) throughout the year.

How to know the variety each student needs? 

Communicate with parents to understand the types of learning they are receiving at home/outside of school. Then provide a variety different from that in school to hand students all the tools they could possibly need.

One way would be through a journal, in their binder with a color stamp for their work done each day, progress sticker charts, notes on their papers given back, and open communication with the teacher.

Communicate through email, verbally at pick ups/drop offs, via phone (only at work during hours), and parent teaching conferences every few months as needed.

Reviewing at the end of a section/period of semester? 

At the end of lessons/time, provide games like flash cards, jeopardy, etc to allow students to review their knowledge and be reminded of anything they forgot before moving into the next lesson/section.

Is their such thing as too much variety in your classroom? 

Yes, absolutely. If you don’t have any structure and your classroom is full of constant change, your students won’t have any regulations or consistency and it will overwhelm the potential structure of the classroom. Variety is good but in a certain compacity.
