The "hidden scrolls" refer to what documents...
What is Until the days Rabbi Yehuda Hanasi (the Prince), the Rabbis of each generation passed down the oral tradition by mouth from generation to generation. The head of the Jewish court or the Prophets would record teachings that they heard from their teachers, and the students would record teachings that they learned from their teachers. However, these writings were never passed down and they were called “hidden scrolls.” Although there were writings of the oral law, the traditions were always kept oral.

Why do you think R' Yose allows one to eat until darkness on a normal shabbos, shouldn't one have to beautify the mitzva of eating the shabbos meal as well?
One commentary explains that R' Yose believes the nature of the shabbos meal is different than the nature of matza. The mitzva of shabbos is to get oneg and enjoyment. Therefore, as long as one goes into shabbos feeling great, he or she has gotten credit for this mitzva doesn't have to do any action on Shabbos itself. However, the mitzva on pesach night is the eating of the matza on the night of pesach. Where Rav Yehuda learns that no, one must also act to get enjoyment on shabbos night as well. One can't get credit by eating before shabbos and just feeling good on shabbos.
