He hunts humans because he has already hunted all the animals he can in the world. He is so bored of hunting animals that he catches way too easily, so he is looking for a challenge. Humans can think more than animals, which makes it more exciting for him.

He realizes animals do feel pain and fear and regrets his ideas about hunting by the end of the story after killing Zaroff.

One of the biggest themes in the story is the theme of being empathetic (understanding others) and putting yourself in their shoes. For example, by the end of the story, Rainsford now understands how animals feel when he hunts them since he is being hunted as well.
