As a way to cope with distressing/overwhelming situations, memories, emotions etc.

You are at a coffee shop with a friend, they are telling you about their week. You are able to hear what they are saying, but are not really listening since you are thinking about a situation that made you uncomfortable the day before.

Is this an example of dissociation?

Yes. Your body is there in the coffee shop with your friend, but your mind is off thinking about other things rather than being in the moment with your friend.
