When milk is processed, all of the fat is removed. The fat will be replaced based off of the milk being produced. For example, no fat is placed back into skim milk but one to two percent is placed back into low fat milk.

What is the importance of the air cell? Where is it located?

The air cell is used to internally grade eggs. The larger the air cell, the older the egg - lower quality. The air cell is located at the large end of the egg.

In order to internally grade eggs, they must be candled using bright lights in dark rooms. This turns the shell translucent and the internal components can be evaluated.
