  • Take the salad spinner to the dish area and spray degreaser (5-6 squirts) onto a green scrub pad. Scrub all parts of the salad spinner. Rinse thoroughly.

  • Carefully remove screws from salad spinner lid crank assembly and store them in a shallow 1⁄6 pan.

  • Disassemble salad spinner lid crank assembly to gain access to the gears. Remove the gears.

  • Drain all sinks. Do not wash salad spinner in water that has already been used to wash other dishes.

  • Wash, rinse, sanitize, and apply Purell to each sink. Then, refill the appropriate compartments with clean water, new sink detergent, and new sanitizer.

  •  Check the ladder is in good condition/not broken before use. If broken, do not use and report to a manager immediately to order a replacement.

  • Two crew members should complete this task. Wearing disposable gloves, one crew member will climb the ladder to take the menu panels down and hand to another gloved crew member at the bottom of the ladder.

  • Dust the menu panels before using glass and multi-surface cleaner.

  • Use a clean, dry towel and glass and multi-surface cleaner to wipe the menu panels.

  • Use a clean, sanitizer-soaked towel to wipe down the black rails.

  • Place the menu panels back in position after they have been thoroughly cleaned. Make sure they are evenly spaced and free of damage.
