 Because Santizing = kills all the germs while:

 Soap and water = only kills some of the germs

We pick it up and throw it in the garbage then change our gloves.

Set them on the counter by the dish washer.

How does a convention oven work?

It circulates air, cooks evenly, improves browning, cooks faster than normal ovens, has multiple racks so you can cook more at a time.

What do we do before leaving the kitchen for breaks or washrooms?

Take apron ,hats, beard nets off, place in an area where you can put them back on after break.
