Boo--Boo is a "mockingbird" because he is an innocent man that simply wishes to stay inside. He does not harm anyone and thus, should not be ridiculed or harmed himself. Tom Robinson--Tom Robinson is a "mockingbird" because he is innocent of the crime that he is charged for. He did not rape Mayella Ewell, but in fact, helped her throughout her lifetime.

Mayella thinks Atticus is mocking her because she has probably never been called "Ma'am" in her life. We know that Burris has a dirty mouth, so we can only assume he gets this from his father. Mayella isn't used to such polite kindness.
