Clean Rinse Sanitize....... what is the purpose of the rinse part?

Rinsing the clean soap off a surface ensures the sanitizer will work effectively and actually sanitize the surface. 

If u do not rinse in between clean and sanitize , the soap kills the sanitizer and does nothing. ** the sanitize part is the most important!!

Why does mustard go first on the bottom bun? (Double points!!!) 2 parts 

1.the mustard "seals" the bun and prevents it from going soggy 

2.  its designed that way for taste ... its the first ingredient that hits the tongue when we bite into it.

Why do we throw out the used breadcrumbs (in the blue container) on Sundays?

To break the cross-contamination cycle   and start fresh on Monday with a clean container and fresh breadcrumbs.
