WHY does milk help if you eat something to spicy? 

Milk helps with spicy food because it contains casein, a protein that binds to capsaicin, the compound that makes peppers spicy. Capsaicin is not water-soluble, so water doesn't effectively wash it away. Instead, it can spread the heat around. Casein, however, helps encapsulate and remove the capsaicin, thus reducing the burning sensation. Additionally, the fat in milk can also help dissolve and wash away the capsaicin.
