The SUBSTANTIAL FORM is what makes a creature to exist as "this" or "that" particular type of being. For example, as a horse, a tree, a human, a cat, ect. It is the "whatness" of a thing.

Every exterior sense has its own proper object. What is the "proper object" of sight?

COLOR

The faculty of sight uses the organ of the eye. The proper object is that which it detects. Sight detects color ... like hearing detects vibrations ... and smell detects odor.

The interior senses allow an animal to organize and make use of the sensibe information that has been received through the body's exterior senses.

How does the use of exterior senses in a human being differ from their use in a non-rational animal, such as a cow or dog?

The information gained through the exterior sense for human beings is used for a high purpose and in a superior way.  A person might see the color of the sunset and this may cause him to see beauty and to reflect about great things.  A dog would probably see the same colors but would use this sensible information in an inferior way.
