It's because of a lot of things, but overall it's because English has MANY different influences from multiple languages, there have been shifts in ruling powers, education access, access to the written word (like the printing press), pronunciation shifts, borrowed words, and changes in lexical "fashion."

One skill I felt confident in was my pattern recognition/production skills and therefore Mimi was about a billion times easier to spell, it was easy for the other kids to say, it made a funny joke (me! me!), and the name "mimi" meant I only had 2 letters I had to master hand writing right away (of course, I also just liked it)
