1. In which order are the Upkeep Step, Draw Step, and Untap Steps?
2.Analia controls Blood Moon and plays Cavern of Souls. Do they make a choice for it as it enters? If not, what happens if Blood Moon leaves the battlefield later?

2.No. Making a choice for Cavern of Souls as it enters is a replacement effect. (614.1c) When determining which replacement effects apply to Cavern of Souls as it's entering the battlefield, the game looks at how it will exist on the battlefield after it enters. (614.12) On the battlefield Cavern of Souls is a Mountain, and Mountains don't make choices as they enter.
If the Blood Moon leaves the battlefield later on, Cavern of Souls is not entering the battlefield again, so it will simply have had no choice made for it.
