They break more complex organic forms down into the 5 basic geometric forms, draw those, and then redraw the edges to make it look like the original organic form.
Why is Depth hard to represent in a drawing on paper?
Because paper is flat and only has 2 dimensions. Objects that have depth are 3 dimensional. The challenge comes in how to show that 3rd dimension (depth) on a 2 dimensional surface. Artists use techniques that create the illusion of depth.
