At the beginning and end of each shift
Do we use any disposable boxes on the tray when delivering meals to the inside residents?
No. Everything going in to the residents' rooms should have regular plates and utensils. NO DRINK GLASSES GO INTO ANYONE'S ROOMS
Why should the delivery bags be zipped up when delivering food to the outside cottages?
To keep the food as hot as possible for the residents.
You are clearing dishes from the dining room and you bring a tray of dirty dishes into the kitchen. What do you do?
Scrape food off plates, throw garbage away. Stack dishes next to the sink.
How many to-go boxes should you put in the larger delivery bag?
No more than 12
Why do we need to wipe down the counters at beginning and end of shift?
Everything needs to be sanitized-it kills the germs on food surfaces

What do you do if you cut your finger during work?
Clean the wound (see CNAs if you need to). Get a bandaid from the CNAs and cover wound. ALWAYS wear a glove on the hand with the bandaid when working to prevent food contamination.
You're at work and you start feeling sick to your stomach or you're not feeling well. What do you do?
Contact supervisor. Let lead server know.
What is the rule for cell phone use in the kitchen?
NO CELL PHONES! Put in Fumie drawer or on black shelves. Not in your pocket!

Touching raw meats then handling vegetables without washing hands between tasks
When is the trap in the dishwasher supposed to be cleaned out?
At the end of the dinner shift, EVERY NIGHT
While you're working, where can you eat snacks or food?
In the break room after your shift. Do not eat food in the kitchen area! It is not sanitary.
Do you get to take a break during your shift at work?
No. Each shift is only around 3 hours long.
When do you do the laundry?
After lunch shift and dinner shift.
Why is cross-contamination such a big concern?
Because people can get sick: upset stomach, dehydration, organ failure and even death.
When delivering meals to the outside cottages, how do you let the resident know the meal is sitting outside their door?
Ring AND Knock on the resident's door. Who is the one exception?
When you have to wash dishes by hand, how do you set up the 3 sinks?

What's an example of a chemical hazard?
A bucket of sanitizer in the food prep area, on the counter while serving food.
You have just collected all of the laundry from lunch. What do you do if the washing machines have clothes in them and the washers are done?
Ask the CNAs kindly if they would please move the load in the washer to the dryer. As servers, we do not touch the residents' clothes in the washers. Then you can start the table cloths and napkins.
After using the bathroom, how many times do you need to wash your hands?
Washing hands TWICE is REQUIRED. Employees must wash their hands while still in the bathroom, and wash hands a second time before returning to food handling duties.
When the 2 washing machines are done with the table cloths and napkins, what can you do?
Move the laundry from the washer to the dryer and start it.
