The Spring scale started channeling the energy and transferred to the cart when it got pushed, which pushed it out to the environment.

How do other contact forces from interactions ( with the air and the track) cause energy transfers in the launcher system? 

The 2 contact forces ( Friction and Air resistance ) stopped the cart with the friction which is created to thermal energy.

Doubling the speed would increase the kinetic energy because it's moving so that would be considered as KE. 

Doubling the mass will also cause kinetic energy to decrease because the mass would weigh down the cart to the point that it stops moving.
