What is Simple is a sugar (glucose, sucrose, lactose). Complex is starch or fiber. The body has to igest the two indifferent ways. Sugar can be digested quickly while starch has to be digested slowly. Therefore energy from sugar is used quickly and energy from starch can last a lot longer.
