It is a symbol of innocence. It was used as evidence for the brothers' lie about a wold eating Yusuf, it was used to prove that Yusuf was innocent when he was accused of trying to sexually harass the Aziz's wife, and it was used to restore Yaqub (A.S.)'s sight.
He said to plant for seven years consecutively, whatever you plant to save a little from it because after that will be seven years of famine/drought and then after that seven years of abundant rain.
