It was selectively bred over more than a decade to achieve its extreme heat, surpassing the previous record holder, the Carolina Reaper, which averages 1.64 million SHU and can peak at 2.2 million SHU. Pepper X has been measured at a maximum of 3.18 million SHU, though the official average is 2.693 million SHU.

Characteristics and Cultivation

Pepper X is a crossbreed of the Carolina Reaper and another pepper sent to Currie by a friend. Its intense heat comes from capsaicin, concentrated in the placental tissue that holds the seeds, rather than the seeds themselves. The pepper’s exterior has many curves and ridges, increasing the surface area for capsaicin production. Currie reported that eating a Pepper X can produce a prolonged burning sensation lasting several hours, highlighting its extreme potency.
