When put into saltwater, the water in the cell is leaving. Causing the cell membranes to shrink. Salt particles are too big to pass through the cell membrane.

The cell membrane shrank because water was leaving the cell. Salt particles are too big to go through the cell membrane so the water leaves and goes towards the salt.

What are some adaptations that crab have to deal with the intertidal zone

must deal with exposure to both air and water, and must not dry out when exposed to air for long periods of time. To cope with this, crabs have developed very thick, dense outer shells to help minimize water loss when out of water.

During the lab where a bag of cornstarch was placed in a beaker containing iodine and water, the cornstarch inside the bag turned purple but the surrounding water did not. What does that mean?

This means the bag was permeable to the iodine. The iodine was able to pass through the bag but the cornstarch was not. That is why the bag turned purple and the liquid in the beaker did not.
