What does the adage "better safe than sorry" mean?

It means if you don't know if you should do something, it's better to make a safer choice than to be sorry you didn't make the right choice later.  

Example: Let's say Mrs. Covington assigns you a worksheet, but doesn't say whether to turn it in or not.  It would be safer to turn it in than to not turn it in.  If you turn it in and she didn't want it, she will just return it (safe).  If she wanted it and you didn't turn it in, you would have a missing grade (sorry).

It means that you always want what you don't have and what others have might look more appealing.   Imagine that you are sitting on one side of a fence and looking at your neighbor's lawn from a distance.  Their lawn may appear nicer than yours, but that's because you can't see the weeds, ant hills, and holes from when you are far away.

It means that once you get set in a pattern or routine, it's hard to break the habit.  Think about how easy it is to train a puppy, but older dogs who are set in their ways will be more stubborn about learning something new.

This proverb means that things seem to take longer when we are paying attention to them.  Have you ever boiled water and watched as you waited for it to boil?  It seems like it takes longer if you are watching than if you just walked away and came back later.  Another good example is microwaving food when you're hungry.  If you watch the minutes on the clock it seems to take longer than if you just walk away and then come back when your food is ready.
