Stay with  the spill to warn everyone walking by, enlist a friend walking by for help. Ask them to get the wet floor sign and a mop. Only once the spill is cleaned should you walk away. Safety first

Tell the guest that can make that dish gluten free by omitting the gravy and stuffing. Manager should be notified that we have a gluten item going through so we can ensure it made properly, and lastly when ringing in make sure to hit the allergy button and select gluten
