They can indirectly and/or secretly figure out if the other person is interested. This can save you some trouble and/or embarrassment, as long as the mutual friend is trustworthy and a good friend.

Answers vary. Rule of thumb: keep physical compliments from the neck up. Other compliments (e.g., intelligence, humor, skill) are less risky and generally appropriate.
